Tomato Egg Rice

Serves : 3

Time Required : 45 Minutes


Basmathi Rice /  Rice used for Fried Rice – 1 cup

Onion – 2medium, chopped

Tomato – 2 medium  , chopped

Scrambled egg – 2 eggs  

Turmeric powder – 1/2 tsp

Chilli powder   1½ tsp

Garam  Masala / All Spice Mix  – 1 tsp optional

Mint & coriander leaves – 1 tbsp each, chopped


Method of Preparation

Cook the rice in the normal method. Make sure that the rice is not over cooked. ( We can take each rice separately , not stick together)

 Heat oil in a frying pan and add chopped onion. Roast it until it become brownish. Add chopped tomato.

Cook until tomatos become mashed in to the gravy.

 Add turmeric ,  chilli powder and garam masala , sauté till the raw smell goes. Add salt and  chopped mint and coriander leaves.Add scrambled egg   and   stir.

Add cooked rice.  Saute it properly.Cover & cook for 4 minutes. Remove from fire.

Garnish with Tomatoes and coriander leaf/ Cilantro

 Serve hot   raita, pickle  and  pappad.
